The first decision is mechanism. Fixed-height stools are simpler and cheaper, with no moving parts to fail — good for bars and restaurants where the counter height is known. Gas-lift adjustable stools add convenience but introduce the same failure point as office chairs: a cheap Class 2 lift sinks under weight. If you go adjustable, demand the gas-lift class and certificate.

What decides quality
